What's your signature dish & How to?

    Idea i got from rocksteadys parma ham thread....

    Everyone has one particular dish they'll always cook when they wanna show off their cooking skills...

    What's yours and post the recipe if you can be arsed to type it out!

    Mine is

    Chicken stuffed with Cranberry Sauce, Bacon Chunks and Mozzarella and wrapped in Pancetta. Accompanied by new potatoes and veg selection. Topped off with a homemade red wine joue....

    What you need! (for 2 people)

    4 Boneless Chicken Breast Fillets
    Jar of cranberry sauce
    Either a pack of diced bacon, or 3/4slices of bacon cut into very small chunks.
    Mozzarella
    Pack of pancetta
    Pack Of New Potatos.
    Selection of veg of your choice
    Red wine
    Flour
    Sugar
    Half an onion

    To make each parcel of stuffed chicken...

    Fry chunks of bacon seperately before adding to chicken!

    Place the chicken breast in between 2 large pieces of cling film (sandwich bags are also useable)
    Beat the absolute living shit out of it with a rolling pin until you're left with a very odd shape chicken pancake.
    Smother the pancake in loads of cranberry sauce, dont be stingy cos you'll regret it, then add the mozzarella & the cooked bacon chunks.
    Then roll up the pancake into what can only be described as a chicken spliff... yagetme??
    then lay 3/4 slices of pancetta on a chopping board 1 overlapping the other just slightly.
    Place your chicken spliff at the bottom of the pancetta and roll it upwards pinning the pancetta to the chicken.

    Once you've done all 4 stick em in the oven for 20-15 minutes on gas mark 7 and voila!

    For the sauce,

    Dice up the half an onion and brown off in a frying pan
    heat up the red wine in a saucepan slowly.
    add a teaspoon of sugar to the mix
    mix in the fried onions
    let cook on a very low heat for about 10 minutes
    add a small amount of flour to the mix to thicken up

    Cook the potatos and veg to your liking/personal taste...

    and voila

    "Chicken stuffed with Cranberry Sauce, Bacon Chunks and Mozzarella and wrapped in Pancetta. Accompanied by new potatoes and veg selection. Topped off with a homemade red wine joue...."

    Mines Bolognese


    I dont have a recipe... i basically just chuck stuff into it untill it tastes nice... but bascially... it goes like this...

    500g of lean mince meat....
    about 30 small tomatoes
    1 tin of creamed tomatoes
    italian mixed herbs
    3-4 cloves of garlic
    3 large red onions
    2 chilli's
    some butter
    obviously some pasta... whatever shape or form you like.. dont really matter. I just generally chukc whatever pasta i have in.


    right so...

    get the 30 odd tomatoes... chuck them in a pot... not a pan... a pot... i hate it when people make bolognese in a pan... thats wrong. you deserve to die.

    so... 30 tomatoes... then add a knob of butter.... and the creamed tomatoe tin and just a small splash of water...

    Now leave this to cook down for a few hours... best thing to do is to stand over it for a while making sure all the tomatoes are squashed down and cooked enough so that the skin starts to come off.... then just put the lid over it and leave it.

    After maybe an hour.... chop up the onions, garlic and chillis and put in the pot.... put the lid back on... leave it again for a few more hour.

    I usually leave it till its condensed to maybe a quarter of the pan.

    now.. unwrap the mince... chuck it in.... yes... chuck it in now.... it tastes better when you put the meat in after you do the sauce.... trust me.

    this takes a while... but mash the meat untill its mashed into tiny bits.... the sauce and meat will then make this kind of weird meaty sludge.... thats perfect!!

    at this point i usually add a few random bits... so if you like mushrooms... stick them in.... if you like carrot... chuck them badboys in... whatever... just chuck it in.

    now put the lid back on and leave it... coming back every 20min or so to give it a stir.

    then once you feel like its ready.... boil a pot of water with some salt and some mixed herbs in it.... the water will go slightly greeny like a tea..... now add the pasta.... and leave to cook to your taste...


    then serve!!

    Boiled pasta + layer of cheddar cheese put on tray place in oven allow cheese to melt and become crispy then consume. Bacon And chicken can also be added to the mix of pasta and cheese.

    im gonna keep an eye on this thread see if i fancy making any of it. so far the winner gotta be rocksteady with the fully homemade bolognese... i mean, real tomatos and everything, none of this chopped in a tin bizzness!!!

    I'm not the greatest cook ever but yeah pasta is the one for me, love tortellini and it's too simple

    Otherwise I like grilled bacon that has kind of been glazed in hoisin sauce

    alright dude check me out,

    couple of egg yoke
    mix that in with a little oil
    and a lot of powdered parmesan
    and some black pepper
    in a big glass bowl

    fry bacon with chopped up garlic, let that cool off.

    boil up the spaghetti (has to be spaghetti)
    chuck that in the glass bowl, mix it up, and then mix in the bacon, and mong out.
