Ubuntu is one of the most user friendly Linux distributions in my experience. Just works. Ubuntu server is pretty awesome too. What would you be using it for? There's thousands of different distro's tailored for different needs.

I dual boot between W7 and Kali (previously Backtrack).

Don't both with Ubuntu, use Mint instead http://www.linuxmint.com/ - its a derivative of ubuntu

Why? Well Ubuntu is all well and good, "most popular" but there are certain ... political decisions that ubuntu have made that can cause annoyances for new users.
Mint stick their fingers up at that and basically add those things that Ubuntu don't "because it isn't foss...."

before it is asked ... I don't use Mint. I use Gentoo and Arch at home and actually manage an ubuntu box at work (only ubuntu to make my life easier for a specific program)
