i really want to know what parts of a song needs to be mono or stereo.

for the following things

Hihats
rides
cymbals
white noises
snarepunch (190hz-200Hz)
snare highs-tops / white noise
bassline/ subbass
kick
piano chords / saw chords / leads/ plucks
vocals

Etc...

what parts need to bee wide what parts needs to be mono?

Nothing really 'needs' to be in stereo/mono but sub and kick looses impact if you try to make it wide... Sub kick and snare are the elements that you would want to keep kind of mono even tho you can make the top frequencies of the snare wider without it affecting the 'punch'.

I usually keep this as a thumb rule: bottom - mono
mids - a little bit of stereo modulation (tiny amounts of phasers, flangers, etc...)
tops - even wider (more modulation, stereo delays and so on)

Sorry if this doesnt make any sense... it's very early for me atm lol

There's no rule of thumb here. Just try to make things work out well. I normally leav my sub, kicks and snares to the center, and pan the hats and cymbals (not always, though). As for the pads, leads and other elements, it really depends on what you want your music to sound like.
