i was in town the other day and i smelt the best smell coming from this van ..

not some shitty burger van but some kind of van made of win .

i ordered.. after much scrutiny of the menu ..

a pork, stuffing , little bit of mustard..and gravy roll ..

ill manage to get hold of left over turkey, and pork and stuff from crimbo no doubt from my birds house..just rob the fridge on boxin day... so anyway, i wanna make the best boxin day sarnies.

    but...

they spread the stuffing on the sarnie . usually if i have left over stuffing from crimbo ect i slice it, break it up .. but this was hot stuffing that was spreadable, but still had substance, not just a stuffin paste..

surely its not just stuffing mixture without being slammed in the oven ?? im not happy with just putting the stuffing mix in the oven for a few mins less than usuall and spreading it..

there has to be a secret.. maybe making home made stuffing is the answer.. i dunno...

yea you use pre-mix stufing just add hot water, and it goes like a paste.. but i dont think it was that just spread in my roll .. had more substance.. i dunno . mite just commit suicide and end it now .. maybe it just cooked for a shorter while in the oven then blended or something..

i make sandwhiches as a job, it was probably a varient on usual stuffing, but maby made up with some of the fat from the hog in, that way it should stay moister..

possibly there was a touch of bread sauce too. go and force the secrets from the van mans lips

Use the liquids left over from the turkey in the stuffing, cook it in a seperate dish from the turkey and cook on a lower heat to prevent it from crisping too much. It should set softer, and if you need to reheat the fats/oils will melt and it should soften up.

Also, try carved turkey and spread stuffing on one side of the bread and apple sauce on the other. Best combo imo.

Adding Sweet Chilli Sauce to the stuffing mix is another big look taste wise & will help with a softer texture, a touch more water should do the trick sameway, as others have mentioned...

A big one for me last year for me was chopped up Roasted Chestnuts, roasted with a whole head of Garlic & 3 Lemons cut in half, with a sprinkling of Chilli Flakes for heat & seasoning to bring everything up, then sprinkle the Chestnuts in your Stuffing Mix, don't chuck the juices though, use 'em for your gravy. ;)

k .. but you think the dried stuffin mix is the one right ? .. the stuff you just add hot water too ..

you dont think the secret is making my own stuffing, with sage and onion and bread and water .. and whatever else you need.. seasoning ect ..

    maybe sausage meat ..

im gunna have to get practising some sarnie making skills over crimbo no doubt ..
