Jerk Chicken & other Jamaican / Carribean Food Recipes ..

    ok, so i know theres Indis how to cook thread, but wanted to keep a thread to go back to, with some nice dishes to try. Rissu started one i think, but just got as far as rice and peas, my mates sister or aunty, was from Zimbabwe, and his house used to smell spankin, thse meatballs she used to cook... i never got the recipe tho, and i wont see him again. spose im trying to find that out. so if anyones got any good recipes stick em up here, or any decent traditional cook books i can buy maybe.

    theres a dude in southampton, who cooks jerk chicken and jerk sauce, serves it in a bun with roasted red peppers and onion.. fuckin spankin.

    so yh .. moskit or anyone, if you can add a couple recipes so i can attack my spice cupboard or whatever, itd be greatly appreciated.. or name a famous chef that tackles these dishes properly and well, and ill try find my own. SPAFE :kermit:

    yes .... yes please do this .. would be quality to get a few good bits and bobs we can all add to and try cook .. ill try take pics of stuff ive cooked namsayin .

    i would love to find out what the meatball thingys were my mates mum / sister / aunty or whatever cooked.. his house smelt fucking wankworthy every night after school, and we used to nick these meatball out the cooking pot .. seriously good ..

    anyone have any ideas what they may of been ?? , i can make italien meatballs with 2 diff minces, bread, egg , herbs and that.. but these were alot better, think they were spicey but not too hot. just a nice bit of spice so you could taste the flavours..

    we need to make this thread heavyweight

    does anyone else find it weird that i seem to like every main meat except for chicken? everyone else seems to think so.

    ive replaced chicken with turkey where i can. turkey sattey, turkey bolognaise, turkey lasagne, turkey steaks, turkey curry etc

    Ingredients:
    2 tbsp sunflower oil
    1 onion, finely chopped
    2 garlic cloves, crushed
    1 scotch bonnet chilli, deseeded and chopped
    500g beef mince
    3 tbsp medium curry powder
    335g can chopped tomatoes
    150ml beef stock
    2 spring onions, chopped

    For the pastry I get one of the dry packs of ingredients you just add water to, and add 2 tbsp of ground turmeric also (let me know if you want the recipes pastry)

    heat the oil in a frying pan, and fry the onion for 5 mins. Add the garlic, chilli and mince and fry till the mince has browned all over.
    add the curry powder and fry for a few more minutes, then add the tomatoes and stock. cover and simmer for 20 mins until most of the liquid is absorbed. Add spring onions and let it cool.
    make pastry as per the instructions on the packet, adding the turmeric to the dry ingredients first.
    roll out the pastry and cut into 10 neat rounds (cutting round a small saucer as a guide). re roll trimmings as necessary
    put a spoonful of the curry mixture onto one half of each round (leaving about a cm to the sides). wet these sides with water then fold the pastry over and seal the edges with a fork. pierce the middle with a fork.
    glaze the patties with a beaten egg, and bake for 25 mins at 200 degrees C.
    You can freeze them, just cook them from frozen for 35 mins (don't forget to glaze them)

    they taste fucking amazing, trust.

    Jerk Chicken ain't Jerk Chicken without the Coconut Wood/Husk Fuelled Kettle BBQ to be honest, you could make the nangest Fresh Jerk & Cook up a sick ass Gravy no doubt, but the main difference between "Jerk Chicken" i've had here & in Jamaica is the slow cook in the BBQ with the Wood/Husk combo, plus the freshness of the meat/veg used for the Jerk helps I guess...
