What's everyone doing vocals-wise?

There's no "best" way of dealing with vocals. All of what Russ has posted is normally used, but will depend on what type of vocals and what you want to achieve.

Any of the Waves vocal plugins is a good place to start

You can always just make two tracks and pan one left and one right different amounts, or use a Sample delay plugin. Loads of ways, HTH
