My new smokers been taking a pasting recently got a run of smoke filled treats this week.
Todays offering:
Cherrywood smoked Pork Shoulder
Applewood Smoked Davidstow
Maple Smoked Bacon
with a Chipolte Mayo made from my own grown/smoked Jalapenos
In a Tiger Bread Baton
Sammich heaven
Yeah its win.
You can simply reconstitute them in water and cook with em, or my mrs blends them up with olive oil, caramelised onions, sundried tomatoes and slow roasted garlic to make a paste/marinade to go on meat/fish.
Nom nom nom.

I have made my own version of this for smoking fish in after a days fishing.
not got to use it yet thoughMoskit any recommendations for wood? Do you just chop bits off trees or use proper chips?
Needs to be clean wood sam, no lychen/moss etc and pourous. Eg. No oily pine, connifer etc.
Otherwise you get an accrid taste to the food.
Today i have home cherry wood smoked Ham, Fried Egg with Spring Onion and Peccarino Pesto in a Tiger Paw.
Omnomnomnomnom.
This morning i diced up leftover kfc hot wings, doused them in a mixture of tomato salsa and hot pepper sauce, toasted some smoked red leicester over the top of it, topped it with a fried egg in between some tiger bread and went about my business.




i need some tiger bread back in my life
